Butternut Squash-Carrot Soup with Lime

Recipe by Chef Linda Elbert, The Basement Table

2 tablespoon olive oil

1 large yellow onion, chopped

1 3/4 lb butternut squash -peeled and cut in 1/2 inch pieces

3 large carrots, peeled and cut in 1/2 inch pieces

1 teaspoon paprika

1 1/4 teaspoon ground cumin

3/4  teaspoon turmeric

3/4 teaspoon ground coriander

6 cups vegetable or chicken stock

salt and pepper

1/2 cup plain yogurt

1/3 cup chopped cilantro, including stems

1 tablespoon fresh lime juice

In a 4 quart soup pot over medium low heat, warm the olive oil.  Add the onion and saute, stirring occasionally, until soft, about 10 minutes.  Add the squash and carrots, and saute, stirring for 10 minutes.  Add the paprika, cumin, turmeric and coriander and continue to saute, stirring occasionally, for 10 minutes longer.  Add the stock and bring to a boil over high heat.  Reduce the heat to low and simmer uncovered until the squash and carrots are soft, 30 to 40 minutes.  Remove from the heat and let cool slightly.

Working with 2 cups at at time, puree in a blender until very light about 3 minutes.  As each batch is pureed, transfer it to a large saucepan.  If the soup is too thick, thin it with a little water until it is the consistency of heavy cream.

Place the soup over medium high heat and warm to serving temperature.  Season with salt and pepper.

Season yogurt with salt and pepper.

To serve, stir the cilantro and lime juice into the soup, mixing well.  Ladle the soup into warmed bowls and drizzle with yogurt. Serve at once.

Scholarship Class Descriptions

2011-2012 MANZANITA CAMPUS FALL AFTERNOON ENRICHMENT

Sept. 19 through Dec. 16

The 3 W’s of GREEN Living: We will be in charge of the worm composting, the waste reduction and the best water practices at Manazanita campus this Fall. This, of course, means we will be learning about and playing with worms, water and waste streams. Our students will turn carrot tops into black gold, we will audit several familiar waste streams and discover the magic of water.

Applied Acoustics: Students will learn about the science of sound while making music from unlikely objects: We will explore the heavenly sounds made from rubbing the rims of wine glasses (filled with water!), make resonators out of plastic water bottles for analyzing certain frequencies in ambient noise, we’ll build a monochord, an ancient device used to measure the harmonic overtones in a vibrating string, and we’ll learn what qualities make us identify a sound as ‘musical’. Students are encouraged to bring in ‘found items’ for making music and analyzing sound. The term will culminate with a short performance and demonstration of what students have explored.

Drumming Circle: Students will explore rudimental drumming, building complex drumming patterns out of simple, rhythmic building blocks. Students will perform using rhythm sticks (which double as drum sticks), tuned hand drums and djembes. At the end of the term, students will be able to perform perididdles and single and double-stroke drum rolls.

Knit and Natter: In this fun class, grade students will knit a puppet or continue knitting their class project. Kindergarten children will enjoy learning finger knitting. Everyone will enjoy knitting and conversation while improving fine motor skills and making a knitted craft.

Sewing: Use needle and thread to make decorations for Fall, October, Thanksgiving and the Winter seasons. Students may also choose to bring items from home to alter or repair or sew on buttons.

SEEDS Distributes Orange Trees

In an effort to promote a sustainable environment through growing food locally, SEEDS has partnered with Transition Laguna Beach to become the recipient of 40 Valencia orange trees donated from the Orange County Great Park. The trees will be distributed to members of TLB to be planted in Laguna Beach backyard gardens, the South Laguna Community Garden, Anneliese Schools, the Boys and Girls Club, and at the Neighborhood Congregational Church.

About Transition Laguna Beach:

Transition Laguna Beach offers a positive approach, as we support our community’s movement toward sustainability and resilience, in light of an uncertain energy future. Beyond our borders, we are part of an international network working with other communities as we thrive with local food, water, and energy.

About the Orange County Great Park:

The mission of the Orange County Great Park Corporation is to develop and operate, preserve and protect the Orange County Great Park for the benefit and enjoyment of all its visitors, those of today and those in the future.

  • Making “earthworm” pudding.
  • Building bugs out of edibles picked from the garden.

Brad Lancaster Teaches Kids About Rainwater Harvesting

On Thursday, June 2, 2011, SEEDS sponsored a rainwater harvesting lecture by Brad Lancaster at Anneliese’s Willowbrook campus. Students, grades 3-6, were  taught the “Eight Principles of Successful Water Harvesting.” Children also had the opportunity to take a look at the recently completely rainwater and grey water harvesting projects on campus. For more information, check out Brad’s books.

Cheers for Rain Harvesting

Praise for Brad Lancaster workshop:

Posted in the Laguna Beach Independent on June 2, 2011:

Like Jane Egly, I did not want to take precious Saturday morning time to listen to Brad Lancaster’s talk about harvesting rainwater, but I got caught up in the topic and ended up staying for an hour (“Slow It, Spread It, Sink It,” May 27 edition).

What a revolutionary set of ideas and plans this man offers, and municipally virtually cost-free!  Simple things that people can do at their homes to catch rainwater and cut down their Colorado River water bills. I have done nothing but rave about his good work since the talk. It was particularly interesting to hear and then read in your pages about the inadvertent destruction of the canyon wetlands and how that very likely caused/contributed to this year’s tragic flooding. Hope he comes back soon and totally support the Annaliese project as a true evolutionary step in this important work.

One thing that was not mentioned was the website:  www.harvestingrainwater.com and www.desertharvesters.org. See? I’m doing it again–raving!!

Thanks to Brad Lancaster, and Seeds for promoting these kinds of ideas.
